This is the 'go to' knife in a kitchen - light, sharp, great length for most tasks. Its truly the perfect all round knife for a cook.

I bought this knife recently and I am very impressed with its sharpness. Now cutting is a joy and it cuts everything like butter. I also bought a Shun 6' chef's knife which costs more than 2 times of this one, but the feeling of cutting is similar. My only complain is this one doesn't last very long, we cook every day and it needs sharpening about every 2-3 months.

I purchased the Victorinox (Forschner) 8" chef's knife on a recommendation from a nationally circulated cooking magazine. It was rated highly, over many, much more expensive knives - both European and Asian, (many of which I have).
The blade and edge keenness,(European bevel of 20 degrees),seem to be of high quality, although I have not owned the knife long enough to test the longevity of the blade edge. The knife is perhaps just a bit bulky, although I am still going through an adjustment period compared to my other knives. The handle also lacks the expensive, sophisticated finish and metal trim of the posher brands.
Altogether, however, the Victorinox 8" chef's knife appears to be a fine addition to my kitchen and certainly is a great buy!

A good knife is so important. And, I just love the Victorinox 8-inch Chef's Knife. You can really tell it's a quality knife and so sharp. If you need a knife, this is one of the best!
